I’ve vaguely tried meal planning before and I always end up falling off the wagon after a day or two. However, this time I’m really hoping to stick to it. After recently analyzing what I eat on a daily basis, it appears that I must be about 90% chocolate. The kids eat well every day but I end up stopping at random bakeries for chocolate cookies or red velvet cake and I’m really starting to regret it. My blood pressure is high and I’m actually afraid to have my cholesterol checked. So by writing this I’m hoping to make a commitment to myself to at least try. I’ll update you every week as to how I got on the previous week and hopefully I’ll last more than a week or two.
All recipes are going to be as quick and easy as possible. I can’t stand for too long and I HATE washing dishes so these recipes should hopefully be suitable for spoonies and caregivers alike – quick to cook and using as little dishes as I can.
To make things even more interesting, we are moving on Saturday. I’m hoping if we can stick to plan this week, we will manage it any week!
Monday – Creamy Vegetable Pot Pie
I’m not sure how this is going to go down with Alex and Emma. Anything new is shunned as if it were going to kill them. However, I know that if this was given to them in school they would devour it. This one is my own recipe. Pasticho is a kind of Greek lasagne, only not as tomatoey (is that a word?), way more bechemel and 100 times better. It is a sure fire winner in our house. It does take 2 pots and a tray to cook, but there is very little chopping!

Thursday Butternut Squash & Spinach Curry
Thursday is a realitively quiet day for me at work so I have more time to spend cooking. I love curry and I’m hoping the kids will eat this too. They can be a bit hit and miss with curry so fingers crossed. Recipe from the lovely Jolene over at One Yummy Mummy.
Friday – Homemade Pizza
Friday is a day of rest before the weekend becomes hectic. Lidl do a great fresh pizza base and sauce. The kids can put on whatever they like and we know it will all be eaten. It’s a win-win situation!
Saturday & Sunday
It’s moving weekend so there will be lots of bacon sandwiches, pastries and takeaways.
